| Turkey Cacciatore

1/2 Cup Onion, thinly sliced
1/2 Cup Green Pepper, cubed
2 Tablespoons Margarine
1/4 lb Fresh Mushrooms, cleaned and quartered
2 Cloves Garlic, minced
1 Can (8 oz.) Stewed Tomatoes
1 Can (8 oz.) Tomato Sauce
1/4 Cup Dry Red Wine
1 Bay Leaf
2 Teaspoons Sugar
1 Teaspoon Dried Basil
1/2 Teaspoon Thyme
1/2 Teaspoon Dried Oregano
1/4 Teaspoon Salt
4 Turkey Thighs (about 3 lbs.)

Method:
1. In 3-quart saucepan, over medium heat, saute onion and green
pepper in margarine until onion is translucent and peppers are
tender-crisp.
2. Add mushrooms and garlic; cook 2-3 minutes
3. Stir in tomatoes, tomato sauce, wine, bay leaf, sugar, basil,
thyme, oregano, and salt. Bring to boil.
4. Add Turkey Thighs. Reduce heat to low; cover and cook 1-1 1/2
hours, or until turkey is tender and internal temperature of the
center of each turkey thigh reaches 180-185 degrees F.
5. Serve over spaghetti.
