Cast Iron Fried Chicken Wings

Ingredients
3 pounds chicken wings
2 cups milk
3 teaspoons salt
1/2 teaspoon ground black pepper
2-3 cups flour
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon oregano
2 teaspoons paprika
1 teaspoon cayenne pepper
2-3 cups flour
1 tablespoon corn starch
oil for frying
Directions
Rinse the chicken wings under cold water and pat dry with a paper towel.
Place wings in a sealable plastic bag and add milk and 1 teaspoon salt and seal. Shake the bag to coat chicken with milk and salt and allow to marinate for up to 4 hours in the refrigerator.
Remove chicken from the plastic bag and place on a drying rack to drain.
Combine remaining salt, pepper, onion powder, garlic powder, oregano, paprika, and cayenne pepper in a small bowl. Season chicken generously on both sides with the spice mixture.
Dredge seasoned chicken wings in flour and shake off the excess. In a large cast iron skillet or deep bottom pan, heat oil to about 375 degrees F. Fry chicken in batches until golden brown on both sides – approx. 8-10 minutes.
Serve with ranch dressing.
