Thai Red Curry

Ingredients
1 tablespoon vegetable oil
2 tablespoons red curry paste
1 inch slice of ginger, grated
1 & 1/2 pounds chicken breasts
3/4 cup coconut milk
1 small bunch spinach leaves
2 cups sliced mushrooms
1/4 cup water
5 kaffir lime leaves
1 tablespoon fish sauce
1 tablespoon brown sugar
small handful of Thai basil leaves
salt to taste

Additional Ingredients
Steamed rice

Directions
1. Heat up a pot on medium heat for about 2 minutes.
2. Add oil and cook the red curry paste and ginger until fragrant, about 4 minutes.
3. Add chicken pieces and coconut milk. Cover with lid and bring to a gentle boil.
4. Add the remaining ingredients and continue simmering with lid on for about 5
minutes.
5. Remove from heat and serve with steamed rice.
